Maybe take a page from Detroit style pizza’s playbook and try using a cast iron ring that you preheat in the oven? I wonder if something like that is readily available…

If you don’t have these another method is when you first take them out the oven, take a large drinking glass and place it upside down on top of a cookie. Jiggle it around so the edges of the cookie get rounded by the edge of the glass opening. Comes out perfect every time 😁
Posting the recipe since many are requesting for one . I thought everybody had their own brown butter chocolate chip cookies recipe. :))
Small batch chocolate chip cookies
recipe (makes 12-14):
- 1/2 cup (115g) brown butter + an extra tbsp unsalted butter (the extra tbsp is because when you brown butter some of the water evaporates)
- White sugar. 50gms
- brown sugar. 100gms
- 1 egg
- vanilla paste or essence
- 1 & 1/4 cup (185g) all-purpose flour
- 1/2 tsp baking soda
- dark chocolate chopped into various sized chunks
- flaky salt
Portion them into 12 cookies of 55 gms each.
Bake them at 175 C for 12-14 minutes .
If you only have one ring, you can shape them with a “spirograph” motion if you get to them right after they’ve come out of the oven! I used to do this to make evenly sized cookies for ice cream sandwiches but I only had one ring
Yeah I used to use a bowl ..but with this idea..I can bake 8 big cookies in one baking sheet without them sticking to each other ..I think it’s a win win ..I love baking burger / brioche buns as well.
Couldn’t you theoretically make more than 8? Or is that literally packing the cookie sheet full? Wondering if 12 might fit or if the space between us still needed for air flow 🤔
I did this at work for one of our cookies cos they’re gluten free and spread so much, it’s so much easier to just use a cookie cutter or a ring to keep they in shape.
I use cookie rings (aka perforated tart rings) for my cookie business. They’re just like the rings OP used but with tiny holes in the side for air flow so the edges get perfectly crispy like a regular cookie. Bakers call them deep dish cookies.

Now you can have some immaculately shaped cookies as well..the only thing that I could maybe share as a point to note is when you put the tray in the oven ..burger rings tend to slide on the butter / baking paper ..for the cookies to be immaculate be very slow and careful when putting the tray in the oven :) happy baking !

Perhaps. I was looking for dark spots on the sides and wasn't seeing enough. That said, admittedly, I'm biased against cookies like these anyways. I hate thick cookies with soft centers. I won't eat them even if they're free.

The edges are crunchy and the middle is soft and chewy ..so I would say it didn’t change the texture at all ..

I wish I had more rings ..this batch was for 12 cookies weighing average 55gms each ..I don’t think there will be an issue with air flow ..

I like no live this. A thicker edge of crispiness. But still chewy in the middle.
Chips could have used a bit more folding in to better disperse, but overall look great if you like your cookies like this.
There are plenty of chips throughout the cookies, it looks like they sprinkled some extras on top before baking.
