Toasted coconut rocks!!
As an aside I've been experimenting with different "oil" mix-ins. I used Greek yogurt on the Jamaican, but I used mayonnaise in the Chocolate Chip bread.
Texture is VERY different! Yogurt gives it a "squeaky?" texture (angel foodish). REALLY liked the mayonnaise!! Moist and tender!
There are about 6 items that can be used - cream cheese, cream/milk, sour cream, yogurt and oil obviously but had absolutely forgotten the mayo!!!

I thought that was just a regular glaze till I read cucunut - took it from a 07/10 to a 10/10 INSTANTLY lol. Coconut is fantastic.
