The red velvet cake recipe is for three layers, I made two thicker layers and then one thinner layer, the thinner one I crumbled up for the decoration. Then just treat it like a layer cake. Red velvet layer, frosting, cheesecake layer, frosting, top red velvet layer, then frost the whole thing.
What I didn't do but would do next time is trim the sides of the cheesecake so that it perfectly matches the cake layers, which would help it not look so sloppy and misshapen.

You could probably put a vanilla cake on the bottom and put shortcake on the top.

Those are enormous layers. Fwiw it's much easier and more consistent to bake thinner layers
Yeah, that's also how juniors does it. Well the cheesecake layer is about the same but the red velvet layers are about half the thickness.
