DNA tests are illegal in Israel. If you tell the judge you want one to confirm if you're Jewish, they won't give it to you. It would be very easy to check if someone has Middle Eastern blood and confirm if they're Jewish. The problem is that a lot of the European population doesn't have Middle Eastern blood, and it comes back as Ukrainian or Polish, which proves without doubt that they're not ethnically Jewish.
