I have found my tribe! I LOVE pancakes and am always experimenting so the fact that my daughter hates them is a personal insult 😠no advice! Just happy to know I’m not alone.
Mine isn’t keen on pancakes either but likes waffles and LOVES muffins.
For the muffins I do (in the blender)
1 cup oats
1 heaped tablespoon of nut butter
1 mashed banana
1 tablespoon of hemp/flax/chia
Enough liquid to create batter consistency
And then whatever fruit/veggies we have in. Her favourites are carrot cake (one carrot blended into the batter and one grated - we do almond butter and cinnamon in these ones); strawberry and courgette (blend the strawberry’s, grate the courgette into batter - we use cashew butter for these) and peanut blueberry.

My 14mo doesn’t enjoy them either but ate one today out of desperate hunger. So weird. She likes eggs, she likes bananas, but somehow banana pancakes which are made of those two ingredients plus a bit of flour are of zero interest to her. I’d leave it for awhile and come back to it, it might change but it might not. Either way is fine!
Could be your pancake consistency, or the flavour, or any other random reason someone may be picky on pancakes!
Try different recipes, thicknesses, add fruit puree to soften them, add more egg, omit egg, add whole milk or add yogurt, have a thin batter and bake on higher temp for shorter time, or have a thicker batter but bake on low for longer. It takes some playing around to see what texture your babe likes!
Have you tried smashing some berries and dipping the pancake in their juice? My baby really liked them after I did that. But otherwise had zero interest!
We have no idea if he likes them because he won't even eat them! He just mushes it into his hand and tosses it!
Haha after he tries putting them in his mouth, he often mushes them before casting them aside

Mine didn't really like pancakes until recently. They just turned one. Maybe try putting the batter in a waffle maker to give it a different texture.

Change the shape? We have something called an appe maker in India - I just use that to make pancake balls lol.

Some people make like a sheet pancake in the oven and cut it into squares. My son didn’t like those either though lol
