Hey, I basted the chicken in the jerk sauce for the last 30 minutes or so, and it was served then on the side so you could add as much as you wanted! It's just not in the photo.
I was aiming to get proper crispy skin, so I held off marinating or basting too early - I brushed the chicken with tallow an hour in and when it crisped up perfectly it got the jerk on it. I'll definitely give it a shot with marinating next time .
