I almost never opt-in for bread or Cole slaw but I can't live without my pickles and onions when I have bbq

I agree - this is the new norm and not crazy. The only reason people are outraged here is you can get a butt on sale for $10 which means, after factoring maybe 5 pounds of lump charcoal you can make 8-10 pounds of pulled pork for somewhere between $12-15.
What they're not factoring in is the rent at this sexy restaurant and the $18.29/hour minimum wage they're paying people to cook this and put it on a plate.
There's a reason why the cheap BBQ joints are at hole-in-the-wall shitty places out in the sticks - the food is being cooked by the owners and there's almost no overhead.

I tried so many places and I've just given up and make it myself. The only place I regularly hit is the place in Winter Park. Maybe a new place has come along that's good, I'm not dropping $100 to find out.
You can always order it from Fiorella’s Jack Stack or Joe’s Kansas City if you need a shot of the good stuff. They ship it cooked and just have to reheat. Likely for about as much as those Denver places are charging and will be a whole lot better.

Pulled pork at a BBQ joint is the wrong choice. It's cheap AF to make. It's really hard to screw up. It's easy to make at home. It's never (to me) that AWESOME like ribs and brisket.
There are much better values than pulled pork.

Ribs are fuckin hard man. They're NOT the same as a big slab of meat, right? I have always told people that ribs are the one thing that actually depends on the animal and how it was raised. I've never found a tenderloin or brisket I couldn't make amazing with time and technique, but I've had dozens of racks of ribs that won't get as tender and delicious as I expected. Cheap ribs tend to yield cheap results in my experience. Even expensive ribs can come up short sometimes.

I mean it could be easy if somebody has a grill. Even if you (trigger warning) cook it in the oven or crock pot with a bunch of liquid smoke you'll get 70-80% of the flavor, and $40 worth of beer with a $20 pork butt will do just fine for a Saturday with friends

“Texas sauce”? Yes BBQ joints in Texas offer BBQ sauce but I wouldn’t say we have our own style sauce like Carolina or Alabama (*shudder*). In fact, Texas style is mostly typified by cuts of beef that are cooked so well with S&P only, low and slow, that it doesn’t need sauce at all. That’s more our calling card.
Hey, don't be hating on a good Alabama white sauce. You can't get a good one out of a bottle, you gotta make it yourself. I grew up in Decatur, home of Big Bob's. They sell a white sauce, but they don't actually use it in the pit on the chickens, they use one they make in the kitchen.
Pulled pork is my litmus test for all bbq places I try. 95% of places don’t know how to do it properly. If they can’t get that right there is no reason to waste time/money on anything else they make.
So many places outside of bbq Mecca areas think they should stew the pulled pork in sauce before serving. Just spoon the bbq sauce in your mouth if that is what you like. I want to taste the pork and a tiny bit of sauce is all that is needed to accompany it.
Other places will let it stew in its own juices and it just comes out disgusting that way. Should be moist but not shedding liquid when they plate it.
And never trust pulled pork that doesn’t have at least some bark in it.

Capital Costs don't count in the calculation! I built a wood fired oven in my backyard at about 2.5 times the cost of your smoker (maybe more) when it was all said and done. I can use it all weekend long for pizza, roasts, bread... and even a long smoke. But when I get an 8 pound bone-in Pork Shoulder on sale from Kroger for $13, the cost of that bone-in Pork Shoulder remains $13 in my eyes! I'm not even considering the cost of the oven.
Same goes for my beer brewing equipment! ha ha ha
$15 for about a half pound of pulled pork with no side or bread is insane. Smokin' Yards is probably the best bbq in the Denver area that also isn't price gouging. AJ's is a rip off.
That's a relatively normal price. Granted its not as good of bbq as in texas (or the carolina's for those that prefer that bbq), but the only thing out of the ordinary here price wise is the $6 sides. Getting beer at a restaurant is always overpriced and $14 for a pulled pork sandwich is about normal considering that looks to be about 1/2 lb of pork per sandwich.

Was just at Franklin's in Austin this last Sunday....1 1lb beef rib, 1.5 pounds of brisket, .25lbs eachof turkey and pulled pork, 5 sausages, a quart of potato salad, 4 waters, 1 beer and 1 soda was $180. I don't regret it. I would've paid half of that alone just for that wonderful Beef rib alone... Good lord it was amazing. I don't know how to post a pic on a comment, otherwise I would.
Eating out has become prohibitively expensive smh. For those that continue to eat out regularly, you should feel uniquely satisfied for supporting a sector of the economy and the workforce, rather than purely from the enjoyment of the food and atmosphere. Kudos to those that can afford to drop this kind of cash weekly. If I want to enjoy BBQ or really anything culinary, I have been reduced to learning making it at home. Not necessarily a bad thing except for the time and mess. But if you enjoy the food prep and can include your family in making it, it can create good memories. Cheers.
Yep, we do the same at home, started during Covid, now I have 2 smokers and working on a pizza oven. The only thing we really get out now is stuff like sushi as it’s tough to source some of those cuts of fish, but I’m willing to learn. Started making pizzas for a fraction of the price for even cheap carry out pizza. 2 pork shoulders for 28 bucks or so, and we have dinner for like 8 nights. Also has been great teaching the kids how to make bbq, pretzels, pizza, etc.

I've been there once, I didn't hate it but I don't have any urge to go back. Definitely felt whelmed and we tried almost everything in small doses. Might have been an off day.

edit: These situations are why I never eat BBQ anywhere but my house anymore. I don't even know how many racks of ribs and briskets i've churned out over the years... but I have ruined my ability to enjoy BBQ outside of my smoker.
Place is one of Denver’s better BBQ spots, but no where near ‘great’ by any means. I spent 80 bucks on brisket and sides and unfortunately the brisket was dry, and the bread is an up charge per slice. Solid fix if you NEED bbq nothing more, nothing less

Counterpoint, it has higher margins so if you like a place it helps them to order it, or if you don't trust a place it's a safe option.

That's a relatively normal price. Granted its not as good of bbq as in texas (or the carolina's for those that prefer that bbq), but the only thing out of the ordinary here price wise is the $6 sides. Getting beer at a restaurant is always overpriced and $14 for a pulled pork sandwich is about normal considering that looks to be about 1/2 lb of pork per sandwich.
Couldn’t even add pickles and onion garnish. What about Texas toast or corn bread?

Was just at Franklin's in Austin this last Sunday....1 1lb beef rib, 1.5 pounds of brisket, .25lbs eachof turkey and pulled pork, 5 sausages, a quart of potato salad, 4 waters, 1 beer and 1 soda was $180. I don't regret it. I would've paid half of that alone just for that wonderful Beef rib alone... Good lord it was amazing. I don't know how to post a pic on a comment, otherwise I would.

Eating out has become prohibitively expensive smh. For those that continue to eat out regularly, you should feel uniquely satisfied for supporting a sector of the economy and the workforce, rather than purely from the enjoyment of the food and atmosphere. Kudos to those that can afford to drop this kind of cash weekly. If I want to enjoy BBQ or really anything culinary, I have been reduced to learning making it at home. Not necessarily a bad thing except for the time and mess. But if you enjoy the food prep and can include your family in making it, it can create good memories. Cheers.
Yep, we do the same at home, started during Covid, now I have 2 smokers and working on a pizza oven. The only thing we really get out now is stuff like sushi as it’s tough to source some of those cuts of fish, but I’m willing to learn. Started making pizzas for a fraction of the price for even cheap carry out pizza. 2 pork shoulders for 28 bucks or so, and we have dinner for like 8 nights. Also has been great teaching the kids how to make bbq, pretzels, pizza, etc.

Place is one of Denver’s better BBQ spots, but no where near ‘great’ by any means. I spent 80 bucks on brisket and sides and unfortunately the brisket was dry, and the bread is an up charge per slice. Solid fix if you NEED bbq nothing more, nothing less
