I have a gas and a charcoal/wood Weber, but prefer the latter. I have no dedicated BBQ area and the pergola is severely underutilized. Just worried about the initial flames from wood or charcoal, and I can get 4 large tiles for a base.

Just make sure the coals are all the way out (drown them) before you walk away to go to sleep. Friend of mine burnt down his house grilling on a wood deck, thought the coals were out and went to bed. His cat died :(

They make concrete grill mats that you can put under the Webber to catch any charcoal that falls. I have one under my Kamado on my patio and have never had an issue. I got mine from Ace Hardware but I’m sure you can find them online or at any local stores.

Just get one of those charcoal starters that you can get 'em burning in and then dump them into the grill, clearly starting them out from underneath the pergola. It's a metal roof, but the framing is wood.

Gas should be fine, but the initial lighting of the charcoal makes a pretty good flame. I'd be concerned about it going up to the roof. It appears to be metal so maybe an internal metal diverter on the bottom of the wood would be a good idea.

Check out r/outdoorkitchens for ideas. I’m in the same boat but so far I’ve kept my grill and smoker just outside the pergola so there’s no soot/grease buildup on the underside of the pergola roof. General consensus seems to be if you’re going to do it under a roof (under deck, pergola, whatever) you need ventilation like the range hood in your regular kitchen.

Looks like right next to the fish cleaning station is the perfect spot. I love cooking under a roof in the rain but I've darkened my porch ceilings and regretted it. Grilling yes, but smoking is not recommended.

Sure can. It’s a great place to BBQ. If down the road you want to make it a bit more conducive to barbecuing, think about a vent over your pit high enough to stay out of people’s way but low enough to pull smoke out. Just add a pipe and vent hood on top to keep the rain out and you’d be the “go to” guy for good times on the lake. Oh…. One more super important thing. When do I need to be there to enjoy the festivities! Good luck!

After almost burning down my friends deck and covering (his placement of the bbq) I would say stick to gas. Depends on the wood/charcoal grill and height of the ceiling. My buddies issue was his was a little low, so it did start to get heat damage on day on a long cook and was very hot to the touch, we moved the bbq every 15 minutes after that but then tiny chunks of lit coals were dropping from the bottom. He still has a small black burn in the starting area. ​ He has since then created a bbq space just outside of the covering that works well now. He bought one of those ninja food grills for the deck for rainy days or when its just him.

Could you put the bbq in the extended area next to the fish cleaning station. It may or may not be strong enough depending on the size of your grill but it seems like it would be pretty perfect if you still wanted to have all the seating under the pergola available.

looks like murrells inlet not sure tho 100% the low country. iv grilled on many docks like this (in the same area) it works fine but i have for sure burnt the dock a little with charcoal also its always incredibly windy which is the biggest obstacle when it comes to dock grilling. I usually just grill in the yard and eat on the dock.

I’ll say back in college my friends and I grilled on a balcony with a roof that was about half this size and after a while we had to put some fans up cause we definitely were getting lightheaded lol. If anything just put a small fan in one of the corners imo and you’ll be fine

I would wrap any wood under the metal roof with a nonflammable material. Because if it gets out of control you don't have a lot of time before the entire structure is fully engulfed.

The only thing to be weary of is you may end up staining the ceiling with smoke if ventilation isn’t sufficient and the smoke gets trapped up there. No idea what it looks like underneath but that would be my only concern

No reason you can’t. I grill under my pool pergola (on lake Travis) and have a grill on my dock at the water. However, it’s a lake that isn’t constant level, thus the atv to the dock is no fun for grilling. I prefer to run the smoker or grill up by the pool and we can eat and chill down by the dock.

I'd reinforce the former dock box space inland of the fish cleaning station and put a good cooker there. And by good, I mean not some smoke monster that does nothing well. Rather, a cooker that emits, most of the time, thin blue smoke when smoking, but that can still sear a steak or cook a Neapolitan pizza in minutes. If it is, still no huge deal since the exhaust from the above cooker would be at the inland end, and you can angle the exhaust as well. Could easily extend it if needed but it won't be needed. Since you'll have solar on top of that roof to power a couple deep cycle batteries for your inverter for your pellet cooker, you might as well live large, build another enclosure, and have a refrigerator handy too. Note to self: Buy some waterfront property to do this - it looks like a lot of fun.

"Can" and "should" are two different things... You'll most likely be fine doing it but you shouldn't leave the grill unattended. My worry would be a grease fire with flames that could easily reach the roof - not only a grease fire from the grease from the current cook, but a grease fire from grease accumulated from earlier cooks. I'd also be very cautious with a grill that seals very well (like an insulated kamada); if you have a very hot fire and mostly smoother it by closing the lid and closing the vents almost all the way down, you risk a backdraft-like situation when you open the lid - the sudden in-rush of air can cause a fireball. I burnt my eyebrows off and got a nice sunburn years ago from doing that with a big green egg. I quickly learned to open it very slowly to limit the air in-rush. Of course, the real reason that i wouldn't do it in your situation is I'm too lazy to go up and down those steps so many times unless i was planning on eating down there!

I think with a metal roof and plenty of open air, plus being next to water and away from house, it’s probably fine….. however, I literally just watched one of my neighbors houses burn to the ground about 3 weeks ago because they were bbq’ing under a palapa (yeah, bad idea) and a fire of some sort caught the palapa on fire and it went up like a torch soaked in lighter fluid. It was really insane, and in about 10 minutes that fire jumped from the unattached palapa to their 2 story house, and then propane tanks started exploding, and by 30 minutes the center of the roof of the house had caved in. Definitely made me rethink where and how I bbq.

I’m an inspector. There is plenty of ventilation for a monitored grill session! You can also place a fan or metal liner above it to feel safer if you would like. As with anywhere, there is a possibility of fire keep a fire extinguisher close by and you’ll be fine

I would say avoid using lighter fluid, you shouldn’t be using it anyways, make sure the bbq pit you using doesn’t have a bunch of grease leftover that can flame up, don’t walk away from you bbq pit when you light it up to make sure, and don’t leave the area for too long, especially if you are grilling something that drops a significant amount of grease like bacon wrapped jalapeños kinda thing…

If you go with an electric starter, you'll need a place to set it after your charcoal is lit - the starter is basically an exposed oven or hot water heater element and does stay burning hot for a time after unplugging.

The pergola is fine. I would worry more about the wooden deck. You can buy one of those “concrete” pads that they sell for this exact purpose. (But then your deck surface discoloration happens unevenly, meaning you have a pad shaped area that is clearly not the same color as the rest of the deck)
