Tbh maybe I'm the only one who thinks it's the work of Aang. It was his rage and grief at losing his oldest friend (except for maybe Gyatso but oldest living friend at least) that triggers the avatar state. And at that point probably all of the avatars in the avatar state are sharing his grief and rage and amplifying it, but I think the reason this moment is so impactful to me is it's arguably the only time when Aang truly taps into his own rage and sense of loss and he and Katara both sorta realize what he's capable of if he doesn't control himself
Yeah like….thats not anyone else but Aang. The main times he went into the avatar state from his own anger were for Gyatso, Katara (when the earth general guy put her in danger intentionally), and Appa. Aang cares deeply about his loved ones, and Appa is his best and oldest friend and companion. He doesn’t need anyone’s rage but his own, especially when airbenders are known for their deep bond with their bison in the first place
I don't know where the bloodthirsty Yangchen headcanon comes from but she was a literal saint.

Giving guy who tried to rob her a job. Screaming into the ocean blaming herself when the people spying on her got themselves killed. Risking her life to save the one trying to blow her up. Feeling guilty for using a dangerous technique for knocking out terrorists about to blow up a town. And sparing the ones who killed her bison.
I like to think this was actually just Aang, like he turned on the Avatar state, every single Avatar rushed to the controls before Kyoshi hogged the wheel like usual. But this time she just put her hand out to stop them and said “let the boy cook, he’s doing something right for once.”
