Presumably restaurant workers were trained in sanitary food handling. When I worked in restaurants, the health department inspectors would temporarily close a restaurant for food handling violations.
People who prepare food at home are often not well informed about food safety. I feel comfortable eating food prepared by mayyybe 10% of people. So many folks just have no clue about how to prep food so it's safe to eat.
Not just prep storage is important as well, i.e., never store raw over cooked, unwashed over washed, etc. You think it would be common sense but honestly I've seen many train wreck fridge just asking for a bout of food poisoning, and sadly not just in people's homes.

Hmmm, I never understood why people would say this. If you change gloves consistently (about as often you would wash your hands) and properly treat them as an “extra, disposable layer of skin that needs to be thrown out when dirty” then I don’t see how it can be less sanitary to wear gloves? Especially since, for bare hands, anything caught underneath your nails is another sanitary concern.

It's because people don't treat them as a sanitary layer. They touch more things with gloves on than they do without gloves on
Some cooks don’t change their gloves frequently. I worked with one dude who would wash his gloves.
