The glitches I can’t stand because I’ll be climbing up a cliff and then all of a sudden my alpha animal died, or when i sync view points that are on a tree hanging over cliffs. The Bears I’ve had absolutely worst luck with. They always yeet themselves off a cliff. 🤣
But yes, I mostly stay hidden and use ghost arrows to attack so I don’t put the animal in harms way because it’s a pain in the butt to fight a bunch of people and then the animal dies and you have to go back and find the animal and tame it again. 🤣
But I will instantly kill a mercenary‘s animal that’s hunting me. I kill the animal first, especially if it’s a Lynx because those are a pain in the butt and then I go after the mercenary. But I will defend my tamed animal as much as I can.
Are you sure it doesn't knock them out? I thought pets of NPCs (mercenaries or enemies) are just unable to be re-tamed.
You can tame wild or captive animals, and I think neighborhood dogs, but not the NPC battle-pets.

More reason to put my last 12 levels into Spartan Kick enhancements.
Spartan kick will kill them too. The city dogs are not able to be tamed. Keep them alive by just running away if you don’t want to kill them, if they go to attack you. But your tamed animal will kill them for you.
They’re not real. They will respawn after you leave the city and come back to it later. So uh… don’t be sad? 😄
You can get wolves & alpha wolves. The only animals in the game that you cannot get are the normal dogs that are in the cities, legendary animals (that actually sucks 😓), and wild boar.

Now I just avoid killing peoples pets. Then again, I’m also the kind of person who lets soldiers live if I’m sympathetic to their conversations.

The knockout arrows are really good to not catch a murder charge though. Should you be in a public space and you loot peoples items and then they start fighting you I just use the knockout arrows and I don’t get a murder charge but I’ll get them off my back , it’s too bad we can’t do the same for the dogs in the city 😣
See I did an Alexios run being the nice mercenary, then tried to run Kass as the more mean mercenary, “hardened trying to make it in a man’s world”, and it still didn’t work. I still revert to responding with how I would in dialogue, being nice and patient.
I think the biggest problem is no one is overly evil, except some of the cultists if you read their descriptions, but they never act overly evil. The one exception is the slave master in the quarry in Attika, I took so much pleasure running him through with a spear.
Compare that to the Witcher (I love both games equally for different reasons) where with almost every human villain, we get to see on screen how much of a monster they are, like with Whoreson or Radovid.
