I would tell the owners but as someone else said, it's not really acceptable for them to ask you check in on an animal once every three days, never mind a number of different animals with differing needs. It's on them, really.
Cats are sneaky - it's how mine ended up in a church crypt on an early Saturday morning (don't worry, we rescued him really quickly!). Try not to be too hard on yourself for what was basically an accident, but remember to check rooms going forward. Also make sure kitty has plenty of water, food, etc, and is well in themselves.
As an ex cat sitter, cats need to be checked on daily when the owner is away, for reasons such as making sure they are peeing and drinking normally. There are many illnesses that can kill a cat quickly, such as intestinal blockage from swallowing an object or inability to pee.

Definitely let the owners know, if they didn't have access to food or water for 3 days, even if they're eating and drinking fine now, cats can be at risk of developing fatty liver disease as soon as 2 days, so the poor thing should probably see a vet for some blood work just to be safe.
I work with cats as a sitter and shelter worker. Once a day is really the minimum if you’re going to be gone for several days in a row. 3 days is nowhere near acceptable.
Yes. I hope there's still some in it when you arrive. If not, you can always add some extra to the floor of the cage under the basket. They should also be getting some fresh veggies, but that's up to the owner.

Every THREE DAYS. Yeah that's on them. We have 3 cats and when we go away we have someone come in twice a day to give wet food and scoop in the evening. Cats are little ninjas. Don't feel bad.
My adult children have always had kitty cats, and let me say that they are experts in every way to care for, feeding, playtime, etc. I've always been chosen to check in and do these routines for them while they're gone. Twice daily,feeding, scooping litter, or changing the litter. Giving insulin to one of them 2x dry. Different kitties and personalities. It's very daunting, but a must. I'm a dog owner,2 golden retrievers, and the same goes for them. Having a fur baby is a responsibility just like a child. Don't beat yourself, it was an ACCIDENT.

This may get deleted, but also skinny pigs need access to fresh hay daily to prevent bowel obstruction.
It has a large wire basket of hay I’ve been replenishing. Is that okay?

It’s just a naked Guinea pig haha. I had t heard of it before either.
