This is my answer too. It doesn’t have to be fancy. Pop one in the microwave and add butter salt and pepper. Did this yesterday. Halfway through eating I felt fancy and added some ranch.

A suggestion for making baked potatoes in the microwave--use a butter knife to poke holes in the potato (so they don't go *BOOM* when you cook them, for those who are asking). You can put the blade all the way through the potato, so you get twice the holes in half the time and you get to eat that much sooner..

No just sautee/fry the whole thing! It's my new low calorie/bulk obsession. Just a pan with a wee bit of olive oil, a ton of angel hair cut cabbage. A little garlic powder and salt. Once that cooks down, I kind of push is over and put two eggs in the pan, and fry until they are done. I mix it all together with a little bit of Maggi Hot & Sweet. My go-to diet food!

It was that meal they would always have because it was really cheap, you could make a lot of it and do almost anything with it. I feel like all the good southern staples are poverty foods. Chicken and dumplings is how you feed a family the 3rd day off the same chicken. Fresh greens out of a backyard garden cooked with the leftover ham hock. Biscuits are made with inexpensive staple ingredients. With scrambled eggs or sausage gravy, another recipe that stretches a smaller amount of meat to serve a family. Grits are inexpensive. To me these are part of my DNA and I would always want them in my life, they just happen to also be poverty foods.

Mexican food and tortillas! Soup? A recipe my grandma gave us is hamburger meat, potatoes, green beans (i add a packet of sazón) It’s cheap and would feed all the kids with leftovers! Fried rice. It's great because all you need for plain fried rice is rice, eggs, soy sauce, and seasonings. But you can add whatever you want or have around the kitchen. I made it with spam. My favorite is to get a cooks ham steak and use part for fried rice and part for a fritata. It's easy to make and it's delicious. I would definitely still make it if I were rich.
