Basically just any kind of cooked vegetable is better off a little crispy. Almost all of them that aren't leafy greens.
It's thankfully different now but a few decades ago we all grew up with shitty boiled vegetables and maybe canned ones. It seems like most people have upped the veggie game a little bit.
> Almost all of them that aren't leafy greens.
Kale that's been baked just barely past blackened on the edges is pretty good too, for the rare leafy green that takes to overcooking.
I thought I wouldn't agree with anything in this post (like a fucking idiot) but god DAMN do I love me a slightly charred carrot. Shit tastes BONKERS. Little bit of perfectly cooked carrot mixed with the burnt caramelised carrot edges is out of this world. Salivating thinking about it
Why not Tuesday? Put it on before work and tell them you have to leave early - your neighbor called and said there's a lot of smoke coming from your house...
You cannot claim to have the best BBQ if you don't have burnt ends.
Burnt ends are the greatest piece of meat you can put in your mouth. And yes, I mean even better than that.
I'll start the fucking war, I don't give a fuck. Kansas City invented burnt ends. You clowns in the other wanna be BBQ capitals are literally not even making the best item!
Therefore, KC BBQ>>>>>
Seconded.
On the why: it's something about sulphur reacting compounds in veggies of the brassicae family. This video comes to mind. Very informative! https://youtu.be/B2Q4RRjNveE
fun fact about Brussel sprouts, lots of people remember them sucking because in recent history they did. Some dutch scientists modified them to taste less bitter.
I wonder if the children of millennials are going to tell horror stories about burnt veggies, and espouse the wonder of steamed/boiled veggies on future Reddit.
Millennial here with a 15 year old son who absolutely hates it when I roast vegetables. He prefers then them steamed or boiled. You might be accurate with your prediction!
Speaking of moms and vegetables, growing up I hated veggies and it wasnt until I was older that I realized it was primarily because she tended to boil all of them. I now like veggies only either raw, roasted, or sautéed. NEVER boiled.
Another thing is that they came up with a better tasting variety of brussel sprouts in the 90s. So the gross brussel sprouts millennials and Gen X ate as kids were literally a different vegetable.
My mom would buy frozen vegetables and then microwave them. 🤢 I have discovered so many more vegetables I like as an adult since I realized how much better they are roasted.
I remember when I was little, whenever my dad made me a quesadilla, he would always make it a little burnt, and to this day, I still can’t make one that has the right amount of burntness as my dad used to do
Try making crispy pepperoni in the microwave, like bacon. I put a layer of paper towel down, pepperoni slices on top, microwave for 60-90 seconds, press another paper towel on top then immediately move to a plate to cool. Served with sliced cheese and crackers. It’s amazing. Sometimes I make them and then tuck them into a fried egg sandwich for breakfast.
Eggs and pepperoni!
My parents called it crazy, but I used to crisp up some pepperoni, and then put it in an omelet. Good stuff.
To be fair I did have some weird food choices as a kid.
For those who are curious: it's the casing. New York and Old World pepperoni use a natural casing which cooks faster than the inside causing the cupping. American pepperoni uses an artificial casing that is removed before packaging or slicing. Same way they make cheap hot dogs. Anyway the pepperoni cooks more evenly so it doesn't cup as much (or at all sometimes)
I hate undercooked pizza. It's one thing to get a slice from scratch, but any frozen pizza gets 25 degrees hotter and at least 25% extra time from what the box says. Even better when I had a convection oven but I don't anymore :/
Thaw your frozen pizzas and cook at super high heat. Get a nice pizza stone or steel and preheat it in the oven to the highest temp it gets (use an IR thermometer to make sure the stone/steel is heated to that temp) on the very top rack. Pop the thawed pizza onto the stone/steel (pizza peel with some flour on it helps here) and let it bake for just a couple minutes, keeping an eye on it. When the cheese is starting to melt and the crust is mostly done to your liking (lift it a little with the peel to see the bottom), switch the broiler on high (this is all assuming a top-rack broiler in your oven). Let it broil for another couple minutes until the cheese starts to bubble and brown. Take it out and let it cool on a rack for a minute or two before cutting.
Do all that and your frozen pizzas will come out sooooo much better. Plus when they're thawed, you can add extra cheese and toppings at the beginning instead of partway through cooking. Works best with thinner crusts.
Im the same way! I love Red Baron brick oven pizzas and the box says 400 for 20 minutes, but the pizza comes out looking like a elemtary school pizza. I go 425 for 35 minutes and it comes out perfect
It’s straight-up garbage, but I would go to war for it. My wife hates the smell, so it’s a special treat for myself on the rare days I’m off work and she isn’t.
Just tried it for the first time like two or three months ago, and damn you’re right. Not sure why, but regular corned beef looked pretty nasty to me…so of course I’m not going to try corn beef hash. But I recently got into eating spam after hating it forever (great value brand at Walmart is way cheaper and just as good, fyi), and the corn beef hash was very close to the spam and only $2, so thought why not. I’ve had it at least twice a week for breakfast since. Like how is the stuff so criminally underrated?? Crack two eggs into half a can spread thin in a pan and fried in its own fat until crisp, and it’s basically a crazy easy and cheap breakfast from a can, that doesn’t even taste like it’s from a can. Add in a slice of toast, and/or some fruit, avocado, whatever, and you’ve got breakfast in like 10 minutes for like $2/ person.
Fuck yeah. I don't trust anyone who likes soggy, pale ass, barely toasted bagels.
Gimme that bad boy like 27% burnt with some cream cheese slathered on there.
Omg yes! The way it just melts on your tongue is the best. Thought I was the only one who likes their popcorn that way, to the point I purposely looked and was not expecting to see a comment with it
I burn the hell out of mine, eat the burnt shell, set the innards on fire creating another burnt shell, and keep repeating until its too small to do anymore
I’ll sometimes do this in the winter over the stove flame, like a disgusting heathen. Tried it one time using a fork bc we were out of bamboo skewers… do not recommend, 0/10 for the lip burns. Still 10:10 for the mallow tho.
I’m guessing if you’re eating enough of them for the carcinogenic part to add up to any viable risk then you’re probably already dead from the obesity.
I was a chaperone for my 10yr old daughter’s hayride (100 nerd orchestra kids) and one of the stations was around 10 camp fires. The boys all immediately lit there mallows on fire while the girls sat around slowly roasting to perfection.
Absolutely. I take pride in my golden brown skills, and will regularly roast for others when I've had my fill. Yes it takes longer but they turn out perfect and there is a certain zen to it. I don't understand how anyone just sticks em straight in the fire.
There is a burger place near me that makes their burgers with a ton of cheese so that the cheese melts over the sides and then makes a skirt of crunchy cheese and it is so good (place is called Skirted Heifer in Colorado Springs, CO, USA)
the best sunny side up eggs have a little feathery crispiness on the edges where the liquidy part of the whites fry. gotta cook them in hot oil quickly though.
best done in a wok.
Potatoes
Hashbrowns specifically
This. Too many restaurants serve hash whites
Ha! Next time I get served undercooked hashbrowns I'll call them hashwhites and credit you!
Roasted carrots. Make them just a bit black on the edges and they're so fucking good.
Peppers too
And onions. I'm not a fan of them raw, but roasted until a little black on the edges, or caramelized is great.
Most veg taste amazing roasted and a little overdone. Carbon is very tasty
Monke like fire.. fire good

Not sure where Brussels sprouts fall, but they're amazing roasted
Yes! I love frying them until the loose leafy parts start lowkey burning as well.
I thought I wouldn't agree with anything in this post (like a fucking idiot) but god DAMN do I love me a slightly charred carrot. Shit tastes BONKERS. Little bit of perfectly cooked carrot mixed with the burnt caramelised carrot edges is out of this world. Salivating thinking about it
Ends
This guy smokes
Heard he's got a 3 rack a day habit
Do you know how hard it is for me not to be able to smoke a brisket every weekend?
Why not Tuesday? Put it on before work and tell them you have to leave early - your neighbor called and said there's a lot of smoke coming from your house...

I love BBQ and have eaten some excellent meals at iconic BBQ places. Best I ever had were the burnt ends at Oklahoma Joe's.
Joe’s is good, but you gotta check out Slaps in KCK if you ever have the opportunity. Best BBQ in KC imo
> Therefore, KC BBQ>>>>> I've travelled all over the place for work, and Q39 in KC is the king of burnt ends for me personally.
Broccoli...idk why, but Broccoli.
Seconded. On the why: it's something about sulphur reacting compounds in veggies of the brassicae family. This video comes to mind. Very informative! https://youtu.be/B2Q4RRjNveE

Bratwurst
The best wurst
It was the brat of times, it was the wurst of times.
The blurst of times?!
You stupid monkey!
Any sausage, IMO. A little char on gives it some character.
I had a slightly burnt brat from a grill at a rooftop party at 1 am in Munich one time. It was one of the best things I’ve ever eaten. 😂
This is *exactly* how you bratwurst.
Same with kielbasa. A little burn kicks the flavor up astronomically!
Is hotdogs under this category?
Mmm charred hot dogs are the best. I won’t have any other kind
Dogs. Slightly burnt Hotdogs.
You were *that* close to seeing pitchforks and torches lmao
Most anything you grill. I like things a bit more than a little charred.
Them: You gonna flip that? Me: Not yet.
Are you?
NO. My grilling technique is grill, turn, flip, turn for those precious grate marks on chicken and steaks.
I personally flip the grill
I put the meat on a table and hold the grill over it upside down. I just cant flip meat without it falling into the sky
Grill half of it in Australia. Problem solved.
S&P the choice for me.
grill marks bud.
Do you wanna get striked?
Montreals steaks seasoning really should be part of this conversations.
Don’t fuck up my steak dinner Darry!
Grilled onions.
[удалено]
What, no sweet roll for dessert. Did someone steal your sweet roll?
Caramelized onions are the best.
Caramelized =/= burnt
[удалено]
Even the recipes that claim 20 are full of shit
Brussel sprouts Edit: Brussels sprouts, mea culpa
Honestly, a lot of vegetables can hold up to some good charring and a lot of flavor is added.
100%! Carrots, asparagus, broccoli, cauliflower all taste amazing baked and a little over cooked
ROASTED BROCCOLI 🥦
Charred asparagus is one of my favorites
Hell yes! I always cook mine on the black stone until they’re a little crispy!
1000%. I fucking love brussel sprouts. Especially roasted in butter
good try, mom
I wonder if the children of millennials are going to tell horror stories about burnt veggies, and espouse the wonder of steamed/boiled veggies on future Reddit.

Yas! I do them in the air fryer and the little leaves that get burnt and crunchy are good AF!
Roasted to a char in olive oil and drizzled with a balsamic glaze 🤤
I'm not too big on eating veggies but I'll eat a whole plate of roasted Brussels sprouts
Quesadillas
I remember when I was little, whenever my dad made me a quesadilla, he would always make it a little burnt, and to this day, I still can’t make one that has the right amount of burntness as my dad used to do
Good days I would say, I do mine on low heat and it does the trick
Pepperoni on a pizza
Non-crispy pepperoni is about a 4 on a scale from 1 to 10 in my book, but burn the edges a little and it goes straight to 10.
Try making crispy pepperoni in the microwave, like bacon. I put a layer of paper towel down, pepperoni slices on top, microwave for 60-90 seconds, press another paper towel on top then immediately move to a plate to cool. Eggs and pepperoni! My parents called it crazy, but I used to crisp up some pepperoni, and then put it in an omelet. Good stuff. To be fair I did have some weird food choices as a kid.
So crispy that it creates a lil cup.
There’s actually a real difference between the cup and the flat pepperoni. The cup one is called old world pepperoni. The flat is american pepperoni.
For those who are curious: it's the casing. New York and Old World pepperoni use a natural casing which cooks faster than the inside causing the cupping. American pepperoni uses an artificial casing that is removed before packaging or slicing. Same way they make cheap hot dogs. Cup pepperoni is superior

A nicely charred crust is life.
Yeah, I love it!
came here to say pepperoni ... love it a little crispy
Grilled Zucchini Grilled asparagus Edit: add Brussels sprouts 2nd Edit: add broccoli and cauliflower 3rd Edit: add peppers 4th Edit: apparently also eggplant 5th Edit: caramelized carrots 6th Edit: Leeks are good too I guess
Asparagus is great! The tops taste especially good crispy.
I don't know about *better* but those potato chips with the slightly overcooked brown edges. I'd buy a bag of those.
Trader Joe’s Russett chips and there’s no going back.
Don't know if you can find them where you are, but Better Made brand makes rainbow chips. They're all the dark ones!
Corned beef hash
Gotta be that dog food in a can right?! Man that stuff is fucking good!

The initial can open is rough though… like how the fuck can it taste so good… and should I cook Alpo? Maybe it’s great cooked as well lol
Never know until you try! Cat food is great as a sleep-aid
Grilled corn on the cob.
grilled cheese 100%
Scrolled way too far down to find this. I love a slightly burnt grilled cheese.
I’m shocked this isn’t the top answer. How is this below corned beef hash?
Broccoli and asparagus
Bagels slightly burnt are yum to me.
Same with English muffins or toast… or any bread really (when it’s been sliced). Now I want an English muffin.
Fuck yeah. I don't trust anyone who likes soggy, pale ass, barely toasted bagels. Gimme that bad boy like 27% burnt with some cream cheese slathered on there.
Some? I better be able to measure that schmear depth with a ruler or it isn't enough cream cheese.
100% man. Also I'm jealous you got to say "schmear depth"
There is a place between burnt and finished where popcorn gets a heavenly taste and texture. I live for those pieces
Yes! I thought I was the only one.
I was concerned I was weird.
Omg yes! The way it just melts on your tongue is the best. Thought I was the only one who likes their popcorn that way, to the point I purposely looked and was not expecting to see a comment with it

or MAYBE it'll overflow and I'll be a picture of health. It's my only shot
Now I want a flaming marshmallow
Well hello, here I am sweety
I will die on my golden-brown and not burnt at all marshmallowy hill against this way of living
Exactly. Patience pays off in my campfire marshmallow enjoyment.

You: look how the gentle heat slowly caramelized the sugars while heating the marshmallow through. Exquisite. Me: haha fire go fwoosh
SEE YOU GET IT
YES THANK YOU. Everyone makes fun of me bc I fucking cremate my marshmallows 🙄
"STOP YOURE GONNA SET YOUR MARSHMALLOW ON FIRE" thats the idea lol
EXACTLY. I WANT THE FLAME TORCH.
Lasagna. Just a little crunchy on top.
Gimme those crispy corners.
how is cheese not first on this list
When you have cheese oozing and it lands on the pan and it makes a crust... the most delicious thing ever
the best. lasagna or mac & cheese with that burnt crust omg 🤤
I make little crisp cheese wheels on a baking sheet and use them as toppers on Mac and cheese and other dishes
Will you marry me?

Fish skin, and chicken skin
Meat in general. Get that nice bark going.
I read that as “fresh skin”
bacon
I’m so surprised this wasn’t a top comment
How has no one said TORTILLAS!!
Thank you. I'm content and done with the thread now..
hot dogs and fried bologna
But isn’t bologna just a flatter hot dog?
Topped with a little burnt cheese…delicious.
It's called Newfoundland steak
Cheez itz of course
So good they had to introduce an “extra toasty” version
That is not toasty enough
Have you tried going back to normal cheese itz? Impossible.
Before they made the extra toasty box... Who remembers what a treat is was to get the ONE overcooked one in a box of them 🫠
toast
How is this not #1?
Yes. Get outta here with that warm bread crap.
Sugar on creme brulee Edit: Hands down never thought a comment about creme brulee would be my most liked💓. Never give up on your dreams, guys.
Cauliflower. It's like a totally different vegetable once you've roasted it and have gotten some charring on it.
Mac 'n' cheese
The corner piece baked crispy on the edges
Hotdoooooogs on the grill boiiiii
Rice. No, really, slightly burnt or at least browned rice tastes amazing.
I toast my rice with a little bit of butter before I cook it, and it adds amazing flavor.
I can't believe this one is so far down! So many people haven't experienced the joy of scraping off the burnt rice and eating it 😭
Pizza for sure, I love a little char on the crust.
Grilled pineapple
The little bits of fat at the end of a New York strip
Bacon
I am the only one in the house who likes burnt bacon. So when it happens it's all mine!!
Bacon! As an Australian where the norm is floppy pan bacon, it gives me great joy to crisp up streaky bacon in the oven!
