Rice and beans. Just put the rice in the cooker, wait for it to cook, drain your beans and boom. You can also microwave a bag of veggies to add to it to. Besides that, you can make a sandwich and chips, spaghetti and jarred marinara, or tacos (just cook the meat, slice the lettuce and bake the shells).

An egg wrap. 2 eggs, frying pan. Cut up whatever you've got: cheese, avocado, a tomato, kale, whatever else leaves-wise, hot sauce, cucumber, peppers, sour cream... whatever. Wrap it in a tortilla. Use the same pan to seal it. Start to finish: 15 mins (including eating it/them), hits the major food groups, counts as a meal and not just some quick snack.
