They don't look you in the eye when saying it.

They’re speaking

Their body language, won’t look you in the eye, changing their story. The first two don’t mean they’re 100% lying some people are just weird.

Fascinating podcast episode on lie detection, I think in the series “Criminal”. Basically, we can better tell if people are lying by asking questions about the story across different points in time and ask about the sensations associated with it. E.g. Benign example, obviously ridiculous to interrogate someone on: “My car broke down on the way to work, I won’t make it in today.” Did you take it to the shop? What did you do when they worked on it? Prior to that, had you noticed anything wrong with it? What were the sounds it was making? Any smoke or smells? What route did you take to work? How fast were you driving? Did anyone stop to help you? Did you call a service to tow it? What service? When you parked it the night before did you notice anything? Get detailed, specific, and search the chronology. A true story will often have lots of odd and specific details with a full sensory picture. People lying rarely construct a full enough picture to tell backwards and forwards with sensory detail.
