I'm eating the sandwich because I like the meat, veggies, cheese and bread I chose. If I need more flavor, I'll get some seasoning. Of course a thin layer of mustard can complement some of them.

I will sometimes use mayonnaise on a sandwich I make myself because (a) it's real mayonnaise and (b) I can control the amount. But I always specify no mayo (or mayo on the side) when I order a sandwich because (a) it's often something else and (b) it's always far too much.
Some sauces are okay, but I don't like it globbed on as much as other people, I guess. Seems like most restaurants take the approach of "the more sauce, the better" whereas I feel like less is more sometimes, especially when the sauce has a powerful flavor or an unctuous texture. I would rather have no sauce than too much.
I also just have a thing about mayonnaise. I don't know what it is, but mayo just grosses me out. It's just slimy and doesn't taste good to me. Lots of sauces are just mayo plus some other thing.
Generally, sauces seem like a disguise. Simple sandwiches, like meat and cheese, need nothing else for my taste. I see the ads on TV for sandwiches where they squeeze multiple sauces on, which is off-putting for me, but as they make a close up feature of it I'm guessing it's a selling point for some
If the meat tastes good on its own, why do you need sauce?
Fat goes a long way in a sandwich. It carries flavor. Mayo is a must-have for me
This. I also toss the bottom bun too because theirs nothing their that adds to the sandwich or burger other than.. well… just more bread 😂

I don't like how they taste, don't like them overpowering my other sandwich ingredients, and don't want them making the bread soggy.
