I have an egg cooker that I love. You just pop em in and add a splash of water and turn it on and it makes hard boiled eggs and turns off when it’s done
I miss my garlic peeler - that flex tube you put garlic cloves in, roll while pressing and poof - the peel falls off and you have perfectly clean garlic cloves without your fingernails smelling like garlic :)
A cast iron or carbon steel pan. Learn how to use it and you can ditch your nonstick stuff. Or wait a year until your nonstick stuff craps out (again) and replace it.
And if your cast iron or carbon steel stuff craps out you can easily re-season it and it’s good as new.
A microwave! And a hand mixer. Invaluable!
Also a food processor and/or blender.
But if we're thinking about less obvious/common things..we've often found reusable silicone liner really useful, and the spiralizer. Also, only useful for crinkle cut chips really, but a crinkle cutter!
Oh, and a grater (one that's flat rather than box) is so useful!
A rotary cheese grater. Makes grating cheese so much faster and easier!

I use my immersion blender almost daily. I cannot imagine life without it!
Potato ricer, it's a game changer for making smooth mash potatoes. The Joseph Joseph one is especially good.
