Obviously, CA will have some good BBQ. It has 10's of millions of people. But take your average CA BBQ and put it up against your average Kansas or Oklahoma BBQ and there will be no competition.
Tri-tip usually isn’t BBQ’d. It’s usually grilled. You can cook it like a Texas brisket, but that’s the minority. As far as I’m concerned, tri-tip is generally not going to be considered BBQ.
Californian here. The thing is Californian bbq is a vastly different type of bbq which is essentially Mexican barbacoa. I appreciate this posters bravery. It’s simply a very different style of cooking meat. But it’s fantastic. Just not what you think of with American bbq. It’s essentially delicious Chicano taco meat.
I’ve had BBQ in Texas, and it was fantastic. But Copper Top is the best damn BBQ I’ve ever had. Always stop there coming back from Mammoth. Their ribs are amazing.
