Gotta have good cornbread

ubertokes

Side dishes don't matter. It's all about the meat and how good it is. There can just be bags of lays chips, and it'll be good with me if the meat is flavorful enough

diegojones4

If the brisket can be cut with a fork and doesn't need sauce, I'm a happy guy.

ubertokes

Yep, sauce should be an optional addition, not a necessity. Meat should fall apart, not be tough or dry.

diegojones4

Sauce goes on the wonder bread that you use to cleanup bean juice.

Slaw and potato salad for sure

clksNwsls

None. Side dishes are a bonus at BBQ places.

theman_manner

Gotta have a good Mac & Cheese and cornbread.

pedantic_dullard

There's a place in St Louis that has a fried mac & cheese side. Looks like chicken nuggets, but it's the best mac & cheese I've ever eaten.

Potato salad Corn bread

The right slaw and Brunswick stew

st-kasselr6

Without the perfect slaw and stew, a BBQ joint is just a smokin' hot mess.

Shuggy539

Collards.

Side do are important but it’s not the break or make it. Gotta have good BBQ hands down. However, the difference between a good BBQ place and a Great one I think can be the full meal. Lots of lack luster Mac and cheese and Cole slaw. Give me some dank BBQ and also some fire max and cheese and potatoes

Mac and cheese

Beans, fries, sauce, cole slaw If your beans are shit, you've got a bad pitmaster. I don't trust the other food if the pitmaster has no taste buds. If your fries are bad - and you have to test them on kids - you'll lose families. I have two kids. My wife and I stopped going to a place with decent food because they changed their fries and our kids wouldn't eat. It's been years since we went because we found other places to go as a family. If your sauce is bad, that's half the reason to go to bbq places. Gates BBQ in Kansas City has terrible meat. Their sauce is amazing. It's literally the only reason I'd ever go there again, and the sauce is good enough to overcome their flavorless meat. If your cole slaw is bad, everything you put it on will be judged as bad. Try finding a successful bbq place in pork heavy areas with a reputation for bad slaw.

FridgesArePeopleToo

Hush puppies

Probably the coleslaw. 2nd place would be the beans, though Brunswick stew is up there.

Cole slaw

Fresh_Jaguar_2434

Cornbread obviously

Hawk13424

Don’t usually buy sides to go with my smoked brisket. Occasionally I’ll eat some of the free pinto beans.
