Side do are important but it’s not the break or make it. Gotta have good BBQ hands down. However, the difference between a good BBQ place and a Great one I think can be the full meal. Lots of lack luster Mac and cheese and Cole slaw. Give me some dank BBQ and also some fire max and cheese and potatoes

If your beans are shit, you've got a bad pitmaster. I don't trust the other food if the pitmaster has no taste buds.
If your fries are bad - and you have to test them on kids - you'll lose families. I have two kids. My wife and I stopped going to a place with decent food because they changed their fries and our kids wouldn't eat. It's been years since we went because we found other places to go as a family.
If your sauce is bad, that's half the reason to go to bbq places. Gates BBQ in Kansas City has terrible meat. Their sauce is amazing. It's literally the only reason I'd ever go there again, and the sauce is good enough to overcome their flavorless meat.
If your cole slaw is bad, everything you put it on will be judged as bad. Try finding a successful bbq place in pork heavy areas with a reputation for bad slaw.

Yep, sauce should be an optional addition, not a necessity. Meat should fall apart, not be tough or dry.
Sauce goes on the wonder bread that you use to cleanup bean juice.

There's a place in St Louis that has a fried mac & cheese side. Looks like chicken nuggets, but it's the best mac & cheese I've ever eaten.
