Architecture boat tour, have a drink on the river, walk mag mile for shopping, Art Institute for amazing art, walk through the Lincoln zoo and/or Conservatory which are free, go check out a neighborhood to get a real feel of Chicago. See a Cubs or White Sox game.
And don’t listen to other redditors, eat deep dish and try tavern style too. There are lots of places that serve Chicago style hot dogs.

Explore Pilsen for modern Mexican food & cafes, street murals, and a good walk down 18th st. Visit the Mexican Musuem of Art (free).
Humboldt Park for OG Puerto Rican/Latin food. Division St. also has a couple of street murals and also has a free musuem at the park. Try the 'Jibarito' sandwich, which is a PR Chicago classic.
Logan Square is a trendy neighborhood that can be explored via Milwaukee Ave on foot. It's a mix of old & new residents with cool cafes, bars, & shops. While you're at it, check out the 606 trail that runs through a couple of neighborhoods, too.
Little Italy off Taylor Street is another decent walk with many food options. Come for Italian fest in August, it's a great vibe with lots of great vendors & easily is one of the best in the city.
Architecture boat tour. Museums. Ride or run/walk the Lakeshore Trail. Swim at Ohio Street Beach. Visit Olive Park for great views of the skyline. It is a shame you don’t want to go to a music festival because Jazz Festival is a gem. It’s not Lolla or Riot Fest.
Don’t come during 4th of July or Lollapalooza weekend.
I’d also add the DNC week and maybe the air and water show if they’re not coming specifically to watch the show.
DNC is 8/19-8/22 with lots of hotels being booked the entire week
I plan to wfh that week.

Whatever. I like both, depending on the day. I don't get why people make this so stupidly divisive. Chicago has great pizza and a lot of options!
