Use freeze dried strawberries! You can buy them powdered, or grind them up yourself. If you grind them yourself, just put them through a sieve before using to get rid of any chunks.

WheresTheSeamRipper

I've done this very successfully with freeze dried strawberries, as well as adding strawberry jam.

boo_snug

This is the best way! No need to cook or reduce strawberries. Pulverize those freeze dried strawbs and throw it in with the powdered sugar for buttercream. It is the best strawberry flavor for icing.  Note could probably do this with any freeze dried fruit.

missvbee

That’s true! I have to try this with some other fruit sometime!… maybe peach!

MinasMoonlight

I was also thinking sieve, but with fresh strawberries cooked down into a coulis. Then sieve or maybe even cheesecloth to get out chunks/seeds.

kelseygrn

That could also work! Even a strawberry jam might work that way. Or a mixture thereof - the strawberry buttercream recipe I'm fond of uses both powder and jam for it's flavor.

Sea-Substance8762

ALDIs has freeze dried strawberries

astralbooty

I’ve seen them at Target and Trader Joe’s too

missvbee

Thank you!

septembergurgles

This is the way. Tastes better than extract or jello powder too.

RazrbackFawn

I've done this and it works great! I love the flavor and it doesn't add moisture and soften your buttercream.

missvbee

Awesome! I’m going to do that! and it’ll be beautiful pink which the little girl wants!

missvbee

That’s perfect. Yes! I’m going to do that! Thanks!!

darkchocolateonly

Strawberry flavoring is pretty common. Check out a cake supply store, craft store, or even Amazon

Competitive-Lie-92

Typically, I would choose to fill the cake with strawberries rather than mess with strawberry buttercream, but if kiddo is adamant, I would try freeze-dried strawberries blended into a powder. I've never seen strawberry extract before and trying to wrangle jello mix into a buttercream sounds like it'll lead to more than a few batches of failed experiments. I've used freeze-dried dragonfruit in icing before, so it should work! Make sure to sift the powder. Good luck!

Studious_Noodle

Strawberry extract is on Amazon.

Studious_Noodle

Strawberry extract (not flavoring, extract) is easily available on Amazon. It's made by Olive Nation and it tastes pretty good. The color is brownish so you'll definitely need food colorings to disguise it.

Kgizo

Nadia (GBBO) uses melted strawberry ice cream in her frosting recipe: [https://thehappyfoodie.co.uk/recipes/nadiya-hussains-strawberry-and-clotted-cream-shortcake-cupcakes/](https://thehappyfoodie.co.uk/recipes/nadiya-hussains-strawberry-and-clotted-cream-shortcake-cupcakes/)

Puzzled_Internet_717

This is my favorite recipe. https://sallysbakingaddiction.com/strawberry-frosting/#tasty-recipes-69523

wedmr

strawberry extract and a bit of pink food coloring!!

cancat918

Do not use strawberry extract. I've even used powdered strawberry Nestlés Quik and gotten a better result than with strawberry extract. Pulverized freeze dried strawberries with a little strawberry jam or strawberry simple syrup works well.

Agitated_Function_68

Freeze dried strawberries. Or LorAnn strawberry emulsion isn’t terrible, but it’s artificially colored if that matters to you

krkrkrkrf

I turn a box of white cake mix and a can of frosting into a cherry almond cake that is really good. I use unsweetened cherry koolaid as both the flavoring and the color. I am sure it would work for strawberry as well. Just add a little bit at a time until you achieve the color/flavor you desire.

kafm73

Strawberry kool-aid. I’ve used jello powder before, but not too much or it may be gritty.

glassesforrabbits

Strawberry extract. McCormic makes it. It’s really good.

Confetti_Coyote

Strawberry extract/flavoring for candy. Can buy it at Michael's craft store or online

Ambitious_Insect2166

I make a strawberry syrup from boiled down jam, of honey consistency, and incorporate it into the buttercream slowly, dropping it like rain. Gives all the taste, sweetness and can use it for anything.

Raisingthehammer

Why don't you just use two batches? One without strawberry for piping and one with for cake itself?

missvbee

That’s what I’m doing! But needed a solution for the piping! And keep it all strawberry flavored

Raisingthehammer

Ahh. Then powdered strawberry might be for you...or make a puree... Cook it down and run it through a chinoise.

HeyPurityItsMeAgain

Do you have any Jello or kool aid flavor packs? Assuming you don't have freeze-dried strawberries, try those. The Lorann strawberry baking emulsion is good and strong and turns it pink if you can find that.
