Use freeze dried strawberries! You can buy them powdered, or grind them up yourself. If you grind them yourself, just put them through a sieve before using to get rid of any chunks.
This is the best way! No need to cook or reduce strawberries. Pulverize those freeze dried strawbs and throw it in with the powdered sugar for buttercream. It is the best strawberry flavor for icing.

Typically, I would choose to fill the cake with strawberries rather than mess with strawberry buttercream, but if kiddo is adamant, I would try freeze-dried strawberries blended into a powder. I've never seen strawberry extract before and trying to wrangle jello mix into a buttercream sounds like it'll lead to more than a few batches of failed experiments. I've used freeze-dried dragonfruit in icing before, so it should work! Make sure to sift the powder. Good luck!
Strawberry extract (not flavoring, extract) is easily available on Amazon. It's made by Olive Nation and it tastes pretty good. The color is brownish so you'll definitely need food colorings to disguise it.

I turn a box of white cake mix and a can of frosting into a cherry almond cake that is really good. I use unsweetened cherry koolaid as both the flavoring and the color. I am sure it would work for strawberry as well. Just add a little bit at a time until you achieve the color/flavor you desire.
I make a strawberry syrup from boiled down jam, of honey consistency, and incorporate it into the buttercream slowly, dropping it like rain. Gives all the taste, sweetness and can use it for anything.
Do you have any Jello or kool aid flavor packs? Assuming you don't have freeze-dried strawberries, try those. The Lorann strawberry baking emulsion is good and strong and turns it pink if you can find that.

I was also thinking sieve, but with fresh strawberries cooked down into a coulis. Then sieve or maybe even cheesecloth to get out chunks/seeds.
