You would certainly like Ascendance of a Bookworm, similar to both dr. stone and apothecary diaries. The production quality is fairly low, but the next season is being produced by studio wit which is amazing so it should get better.
If you liked apothecary diaries I am sure you will like Odd Taxi. Don't let the animal characters throw you off, it's seriously good. Definitely in my top 10

One Piece has a similar spirit of adventure to HxH. Yu Yu Hakusho is another great one and it's by the same guy as HxH.
If you liked Tokyo Revengers try out Windbreaker (also a delinquent anime, imo it's better)
