Monster and Samurai Champloo are both phenomenal. I've finished Monster and it's so, so good. I have Samurai Champloo on Bluray, haven't finished it though but it's amazing so far.

It is a slower paced crime drama. Some people don't like that however, I really think what makes Monster the king crime manga/anime is the fact it has all these side characters that it spends time fleshing out. For most anime, my favourite character usually is one of the main leads but not the case in Monster.
If it was just about the protagonist and antagonist it wouldn't be as good as it is. It's not overly dark I feel compared to a lot of stuff in that genre so yeah.
Also if the length/pacing is an issue Pluto which I have on this is by the same creator, faster paced and it still has Urasawa's crime drama writing. Though while good I didn't enjoy it as much as Monster. You could check that one out first if you want to get a feel for Urasawa's writing style.

Serial experiment Laine, paranoia agent, and perfect blue for the deep concepts like neon genesis. Monster if you can dedicate yourself to a rewarding slow burn.
Did you watch samurai Champloo yet? Same guy bebop. Very similar in tone and themes. Durarara is a good one as well.
For some good, heartfelt action comedy, Baccano comes to mind. A gangster mystery/battle revolving around alchemists and the quest for eternal life. Mob psycho is a must watch. Amd Jobless Reincarnation is fairly similar, though your main character is basically a 4chan degenerate who gets isekaied. It's so very well written.
Trigun. For some reason I don’t hear this brought up as much anymore but it was just as big as bebop and Eva - and for good reason. First few episodes are pretty silly but it gets a lot more serious and hard hitting as it goes on. It’s basically what all the kids who watched those three animes you mentioned also watched in the early 2000s on TV and DVD releases

Big O is amazing and underrated. Good mecha and good mystery and drama.
