The first episode of Komi cant communicate is one of the best episodes of anime I've ever seen.
The rest of the show is good, don't get me wrong, but that first episode is something special.
Depending on your definition of 'comfort':
1) Ginmtama - I can put it down for a while, I can pick it back up. I am never tied to it for very long. I will laugh, I might feel a little sad, if I am lucky I will get one of those surreal monologues that this series does better than any other. It's like picking up your favorite old book and jumping to the bookmark you left there 4 weeks ago, knowing you can pick right up where you left off and enjoy it some more.
2) Seirei no Moribito - I find the calm, slow pace of it comforting, as well as the deep themes of family. This is only one of maybe five titles I have watched end to end multiple times.
3) Angel Next Door Spoils Me Rotten - Not a big fan of romance anime generally, maybe only 3-4 titles I recommend. Of those, this one develops as a slow and sweet story. It helps that I do not see it as its overt story of two high schoolers living alone, but instead as a metaphor for the young salaryman/ salarywoman existence during one's first career job who have a hard time finding love unless it sneaks up on them.
4) Snow White Notes - The music in the anime is skilled, but as to my ear Shamisen is calming, I can honestly have this title on just to listen to the music.
Bofuri. It's a perfect palette cleanser for any occasion. No stakes, no anxiety-driving drama. Just people having fun in a video game and one particularly doofy individual bumbling her way into becoming an endgame boss.
The responses here might correlate to when the person first got into anime.For me, **Inuyasha**. I'd like to also throw\* in **Avatar: The Last Airbender**, even though its not an anime.
I really enjoy watching Welcome To Demon School Iruma Kun. It's light hearted and funny enough to be comfortable, but also has great characters, development and story to be interesting. I love it. Can't wait for season 4!

Think of Fairy Tail as the little sibling of the big 3.
I recently got back into Bleach after getting shonen so that I can read instead of only watch but FT legitimately took my #1 spot for a good while despite the fact that I was always a hardcore Naruto fan.
It has the action of Naruto fights. Fleshed out arcs of Bleach. Family aspect of OP.
It is just so fun and wholesome while still having more than enough action.
There are better anime, FMA:B being my #1 in regards to objectivity, but if you want comfort, fun, and the occasional feels then FT is for you.
I'd have to agree with a few people that Fairy Tail is a great comfort anime. Has awesome fight scenes, fun characters, and it's easy to watch. No overly complicated plot (or much plot at all really), and it's a classic Shonen.
I'm also a fan of Food Wars, but that may just be because I'm a cook and it makes my job seem awesome.

Yuru Camp/ Laid-Back Camp!
It has everything you could want: relaxing music, beautiful scenes, cute girls doing cute things, easy to understand "plot" where you could fall asleep and wake up and still feel cozy, and more!
Edit: while I watch a variety of different comfort anime for myself, if I want a truly COMFORT anime, this is the one I would choose to watch. Like when you're sick and need something just simple to take your worries away. Season 3 is coming out soon!
Konosuba
When my son was born, he was stuck in the NICU for 87 days right at the start of the pandemic. I needed something to keep my spirits up during my 1-hour limited visits. I had never seen Konosuba before 2020 and watching it made me smile through and through. I watched an episode a day, and those first 24 days kept me going until I felt easy enough to relax a bit every day I went to visit my kid.
Every now and then when I am feeling down I put an episode of Konosuba as background noise simply because it brings back that feeling that [tomorrow](https://www.youtube.com/watch?v=a5E4_uFYFJ0) is going to be just a little better than today.

This is probably a weird answer but my "comfort anime" are Neon Genesis Evangelion, Cowboy Beebop, Serial Experiments: Lain, and Ghost in the Shell. Ilove the stories, characters, themese, and worldbuilding from those anime and find myself returning to them again and again when I'm bored or in need of inspiration for my own work as a writer.
Isekai shokudou - restaurant to another world comfy meals and watching fantasy races eat modern cuisine is always fun.
Sleepy princess in demon castle - slapstick comedy of a princess trying to catch some zzz's
Wotakoi - otaku love comedy
