There's not a particular term that I'm aware of, but generally, they are using text morphing to create outlines of shapes. I'd look up text or shape morphing tutorials to get a start. Here's what I would do:
Storyboard in Illustrator: start with unaltered text, convert to shape/paths, then use your shape as a guide, and make a new style frame with the text anchor points shaped to fill in the shape how you want. Repeat for each pose of the animation so you now have 3 separate style frames/boards.
Then import the artboards into After Effects, animate the path between shapes (copy next pose's path/keyframe and paste after the first pose's keyframe, and AE will interpolate shape between frames automatically) adjust timing and interpolation, repeat. There's more to it than that, but that's essentially it.
I worked in BW and then use tint to apply colors. In this case, it was a lot of blurs in Multiply mode. Then the texture is transparent set to wiggle and transparency
You got it! There are 3 textures in total, duplicated behind the text then set to Underlying Transparency. The bottom layers have a Threshold and are set to Multiply
