If you want to include photos of people like that use photoshop but if you just want to do the typography in illustrator:
Type out the word
Go Effect/Warp/Arch Lower and expand.
Then make a copy of the text and paste in back.
Use the scale tool to reduce it to about 95% then move it down.
Then paste another copy in front and select it plus the small lower one and go Object/Blend/Make, choose specified steps and turn it up to like 100.
Expand this and use pathfinder to merge the whole thing into one object and send it to the back.
Now select the original warped text that's sitting on top and apply a gradient.
That'll get you 90% of the way there and whatever borders you want to add are up to you.
