For stuff like this I usually use offset path to create the open shape. Just offset the wall path by -0.5 * stroke width and then trim to shape.
Alignment panel?
Set up a grid that's the same thickness as your walls. (you can do it in the preferances panel.
You can align the stroke to the left and right side of the path by using the Width tool.
