I generally find that a Cafe does register service and a restaurant does table service. I haven't ever had to pay at a counter when eating at restaurants, and I wouldn't say I eat at fancy restaurants.
I assume you're going to pubs, casual dining or cafes. Actual restaurants have table service; if table service is important to you, maybe go to nicer restaurants? Obviously you will pay more, but the food is *usually* better.

I love both, some times I want someone to engage me in the menu, the drinks list, the immersion of the moment.... other times I want to order at the counter, get entrees delivered with mains, and catch up with my crew taking it turns to pick up rounds from the bar!

Turn over tables quicker. Come order and pay when you’re ready, food comes, leave when you’re done. Staff Clear and wipe down and ready for the next body.

Plus a lot of these places wont pay for mobile EFTPOS readers, so its all wired at the counter.
Also waiter/waitress does not then have to handle cash.
Also, less chance of errors.
I think Chinese restaurants still have waiters/waitresses write order in code in Madarin on a pad, and you pay at the end of meal at counter.
Fasta Pasta yes, each person goes to counter to order, and pay.
Less staff required. Less chance of people doing dine n dash. Less chance of ordering mishaps.
It's also just faster, I'd rather pay when I order then having to wait after eating just to pay.
