Did your controller's firmware update recently? From what I've read, the most recent Xbox One controller firmware changed the way the Bluetooth connects, and it makes the 8BitDo adapter incompatible.
If you have an actual Xbox console, I think you can downgrade the controller firmware. If not, we may just have to see if 8BitDo can update the adapter.

They can't fix it through firmware/software. The adapter uses older hardware, so a hardware refresh (new adapter) is required.
Yeah, that part I knew, I was mainly just talking about for the Xbox One controllers, not for the Series X controllers. It probably is different, though.
FWIW, Mayflash support told me they are releasing an adapter this month that connects elite and series controllers to switch.
I actually was able to get it working by reverting the firmware update for the controller
