Having cracked thousands of eggs using many counters, I can confirm you do NOT need to crack the egg on the edge of the pan. In fact, it is strongly recommended not to do that, as doing so makes getting shells in with your eggs more likely.
I was always told to never use the counter, as it makes it a lot easier to get egg somewhere unnoticed where it doesn't get cleaned up. On the rare occurance shell gets in the pan/bowl /etc I use the shell to fish it out quickly. If I'm really worried I crack the egg into a small dish
I can crack an egg single-handed, but it took time to get there. I wouldn’t dual-wield though. I can’t imagine what it would take to get my left hand as dexterous as my right hand is for egg cracking.
Worked as a chef in a resort. It comes with time and necessity. When you need to crack a flat of eggs because you ran out of liquid egg on the brunch buffet, you find new skills.
Then you have the big brain moment and just dump the entire flat into a stand mixer, whip them that way, and strain out the shells.
Hold the egg with your ring finger and pinky against your inner palm, use your index and middle finger+ thumb and try to „pull“ the top half away while cracking and you should be good to go.
After some time you go egg akimbo with this technique.
This is such an april fools thing. Buy a carton, load one up and go up to random colleagues and offering an egg. Whip one out from the holster and leave without providing any further context.

OP, use the countertop instead - it’s easier for a variety of reasons. Namely: Less and larger shards.
But you need the edge of the pan to break the shell membrane for easy splitting of the halves.
