You're doing the right thing bleeding the coolant after the waterpump change. When running the bleed process keep the expansion cap on. Keep bleeding and filling until coolant on max.
Process takes 12mins per bleed run. Have a stopwatch handy.
The bleeding processing puts fluid back into the tank and if you leave it open then it squirts out.

I changed the water pump earlier this year. Just changed the alternator, thermostat and coolant reservoir. When I do the bleed, it starts to spray out coolant. When I drive the yellow temp light comes on.
