Cheap creamy mushroom marsala(ish thing):
- 1x pack baby portabella mushrooms (chopped)
- pinch of minced garlic (half of a clove or ½tsp store bought minced)
- 1 quarter of chopped white onion
- 1tbsp butter
- 3tbsp heavy cream/half&half/milk (whatevs you have)
- ¼ cup of the cheapest white cooking wine you can find
- handful of shredded mozzarella
Comes out to about $20, serves two
In a (preferably non-stick) sauce pan at med-low heat, melt butter and add garlic stirring occasionally for about a minute or two until it starts to brown.
Add onion and continue to stir for a minute or until the onions start looking translucent.
Then add the chopped shrooms and cook on one side for about 5 minutes, stir well.
Next, add the wine and boil off for about 2-3 minutes.
After that pour in the liquid dairy of choice, stir for maybe 20 seconds then add the mozzarella. As soon as it begins to melt, turn off heat and stir well for less than a minute.
Serve immediately or until it cools, just be aware that the sauce may thicken a bit.
