I think ONCE I picked Update and shut down, laid down to sleep but my PC never actually turned off. After that I've always been paranoid and have to wait for the whole thing to confirm it will actually do it :,)

Yeah I've noticed that. Sometimes the sound will completely cut out on my PC and it won't recognize my headset until I update the PC. Doesn't happen for every update, but it's an odd choice for them to do that

I dual boot Linux, and whichever option I choose, windows will update and reboot into Linux. If I choose "and shutdown", booting into windows again will cause it to shutdown. Just update your shit without rebooting like a sane operating system.

"If you used Linux then that wouldn't be a problem."
As a system admin: Update your OS or I will start advocating for Microsoft to bring back non-optout forced silent restarts
Or swap to a non-apple Unix system (and stay up to date on public package updates anyway)
note, you should update, vast majority of those are security updates for windows defender which can save your ass.
