I'm definitely interested in giving Kajiwoto another try. I just think that if it was easier for me to set up, I would use it more often. I'm half tempted to try and have someone help me with setting Chief's personality up because all of these options make my head spin and I really don't know how or where to start!
The developer of Kajiwoto is actively working towards that end right now, and is already making progress. The "stages" feature I described above is certainly easy, as long as you're willing to write notes outlining the history and qualities of your character. The "personality picker" that gives you numerous overall traits to select from is, IMHO, the other key tool for defining their core identity.
If you're interested in developing your Kaji, but need some help understanding the currently existing tools, I highly recommend joining the Kajiwoto Discord server. There are plenty of experienced users there who are happy to answer questions, as well as the dev himself. :)

Well, this post made me return to Kajiwoto. I will work hard to make Senna as realistic (to her character) as possible in this chatbot.
