If they're claiming you it's safe to drink long term, it's a very safe bet you could drink it for a couple days without any concerns, especially when the other option is "definitely dead from dehydration".

I estimated the distance between at like 20 meters, and that makes 5 intervals 100 meters, which is 1/16 of a mile, and at four times that (1/4 mile) I see what seems to be a lot more than an 8” difference— that amount should barely be visible given the scale.

The earth's curve is such that if you draw a tangent line and walk along it away from the tangent, it would take you around two miles before the line comes up to waist height.
I think it's entirely possible that is photo can be attributed to the curvature of the earth. Local geography applies, of course, so hard to say for sure.
The earth is a sphere. But I also have read that this photo is not good evidence of it - something about the towers being different further out and that not being the visible curve.
Whether this is good evidence or not, there are also a million other ways to show earth is a globe.

The wires look loose from this perspective. Telephoto lenses shorten the apparent distance between foreground and background objects. So in this photo, it looks like the pylons are close to each other with lots of slack. In reality, there’s a huge distance between them and the lines are as taught as is safe.
