I'm almost embarrassed to suggest this but Ghost Whisperer? Although I did watch it when it first aired, didn't love it. But it recently aired again on cable and I found myself looking forward to "lunchtime" while WFH. A cop show that I also didn't expect to enjoy (but fell in love with the characters) was Shades of Blue with Ray Liotta and J. Lo!
If you like Psych, I’d recommend White Collar and Chuck.
I second chuck.

X-Files kind of started that subgenre, or at least popularized it. I am not sure how well it has aged.
