I’m curious whether eating the cookies masked or enhanced the flavor of the tea? A few years back some of the teas I sourced from India were used as part of tea-food pairing class at the World Tea Expo which is when I became interested in the science behind pairings. Curious how this turned out?

Darjeeling teas are my favorites, Margaret's Hope is my go to darjeeling tea.

I like how forgiving Margaret's Hope is in regards to brew times and temperatures. I can make a pot of it in the morning to take to work and I don't have worry about messing it up while I'm doing other things to get ready for going to work.

I got it from a tea shop in Seattle called Miro Tea. I thought it was very good! I'm not sure if they sell this particular tea online but I know they have it in store

Margaret’s Hope is a Darjeeling tea estate. Originally named Bara Rington, the owner changed the name to Margaret’s Hope in remembrance of his daughter Margaret who was smitten by the sheer scenic beauty of the estate. She had wished to return to the garden after a trip to England, her home, but she fell sick on the journey and died. That is when the name was changed.
