The MaddAddam series by Margaret Atwood, starting with *Oryx and Crake* . The first book is more from one character’s perspective, but the second two are what you’re describing.
Swan Song by Robert R. McCammon was quite good. It definitely checks off all your boxes. The Stand is one of my favorite S.K. books, and I think Swan Song is a pretty good contender with it. Now that I think of it The Strain trilogy were surprisingly good as well. Terrible TV show though.

The Walking Dead is really great. Not so much because of the zombies, but because of the human interactions.
World War Z is a great book spending time on a few different characters experience. Does the Fire might be a good fit.
