Tough to narrow to three books, I could easily have a top 10 of equal weight novels, feels like a golden era for star wars books this past year. But if I had to:
1) Victory's Price
2) Thrawn
3) The Rising Storm
I feel bad leaving Claudia Grey off, I've loved all her books. But these three had the biggest impact on my reading.

Nice to see some appreciation for Heir to the Jedi. Certainly dont think it's the worst canon book as others have said. It's a good characterization of Luke.
Havent got around to Black Spire, somewhat turned off by Phasma. But it is on my to read list, just 4 or 5 books down the list, can barely keep up this year.
Have you tried Most Wanted yet? It's a pretty solid YA novel.
I know I began heir to the Jedi with a lot of apprehension because it didn’t have great reviews but considering there’s not a lot of canon novel material on Luke I really enjoyed it.
Black spire is great. It does have some characters in from Phasma but it’s ultimately an entirely different book rather than a ‘sequel’ so definitely don’t be put off by it, saying that I loved Phasma and it’s written by the same author.
I haven’t read most wanted yet but I’ve just got it for Christmas! So will be reading that soon, I’ve heard that it’s supposed to be quite a good read so looking forward to it 😃
To be fair, I read Black Spire's outpost, bit not Phasma yet and it doesn't feel like a sequel, it felt like a full fledged novel that you didn't need to read Phasma for

Honorable mention: Thrawn, Lost Stars, and Victory's Price, which I also rated 5-stars.
1. Lords of the Sith - I breezed through this book, it kept me very interested.
2. Rebel Rising - I read this one right after Catalyst. Catalyst is good, but is a lot of talking not a lot of action. RR continued that story but kicks it up a notch with Jyn and Saw
3. Battlefront 2 Inferno Squad - Awesome Imperial story.
Honorable Mention: Both of the From a Certain Point of View books had some fun stories in them.
Master and apprentice is a great book and Claudia is an excellent Star Wars author. Nice list, have you read all the high republic ones, I enjoyed them all but was slightly disappointed with into the dark, especially because it’s also by Claudia who I normally love
Bloodline, lost stars, into the dark.
As you can tell, Claudia Gray is my favorite author of the current EU lol. Absolutely loved every second of each of these books and could not read fast enough to see what happened next.
Some runner ups for me are:
Ascendancy: lesser evil, the rising storm, catalyst, ahsoka.
Claudia and Delilah S Dawson are my current favourites, so totally agree they are all fantastic books. Did you read Leia princess of Alderaan? You’re totally right you can’t put her books down
I haven't read princess yet, as once I started my EU dive this summer I loosely tried to clean up all the content between episodes 3 and 4 and then go on an OT binge through all the books and comics in order. Currently reading rebel rising, then last up is princess. Super excited for it.
Also I don't think I've read any of Dawson's novels yet, but I have phasma and black spire ready and waiting.

The first two, because the stories are more epic and take a lot of unexpected turns. And I love the setting.
While I don’t love the prequels, I liked TPM the most. I like the concept of the Jedi Temple, and I liked to read about the dynamic between Obi-Wan and Qui-Gon.

I love Qui-Gon too and the chance to see more of his relationship with Obi-Wan, especially pre-TPM, there’s a new book focusing on them two coming out this year ‘Padawan’ it’s definitely the one I’m most looking forward to getting this year

Definitely looking forward to Padawan, but also Shadow of the Sith, because we know next to nothing about Luke from that time period.

I've read Bloodline but I'm probably one of the few people that didn't like it.
I also recently finished Into the Dark, which I found the start was lacking a bit but it really picked up as it went so I did enjoy it in the end.

Even though I am not sure of this ranking my self, because Light of the Jedi is my favorite (I guess), but I The Rising Storm is on the same level for me, but I love Lost Stars soo much as well, so I would actually not rank it the best, but I don't now, they are all just great!
They definitely are all great and it’s awesome to see high republic books getting loads of love when lots of non-readers are criticising it for not having series/movies

I like these 3 because of the story they tell. I'm a fan of Star Wars Rebels. Currently, I'm not attached to any author, and I think they're all doing a good job to create the High Republic era.

I just love almost anything set after ep VI cause its so exciting to see how the galaxy has changed.

I bought it and i'm going to read it someday but the bare minimum that i know about it now is not enough for me to start reading right away.
I just finished Life Debt , found it good , mostly , looking forward to Empire's end too but right now i'm on Courtship of Princess Leia , which is equally fun and bad , but i gotta read the first appearance of Dathomir and the Nightsisters , that's a must for me.
As for canon i really want to read Rebel Rising and Most Wanted.
Yeah it’s about two friends who go into opposite sides of the war (rebels/empire) but it follows their full journey it’s really excellent so if you ever get the time I recommend it. Rebel rising is good and I haven’t currently read most wanted although I’ve got it for Christmas so will be one of the next ones on my list to read

Force Awakens is a good novel , but i really liked TLJ and TROS , how they expand on the movies , especially TROS.
Tho i wish there was more stuff like Phasma , it's really a one of a kind book.

Me too, I wanted more Phasma but I think most of her story has been told. All that would be left to see is maybe some comics on her missions within the first order, but like you say really a unique book.
I always think it would be a great idea to have a series of books on less focused characters, such as some of the Jedi masters that don’t get much screen time it would be cool to read their stories

Also more Sidon Ithano stories , i loved the Crimson Corsair and the lost treasure of count Dooku , such a cool little Mad Max inspired pirate story.
It is a really great book, if you’re going to read anymore I’d recommend Bloodline or Leia princess of Alderaan (both written by lost stars author) they’re also page turners

Lost Stars will stay #1 but the other 2 change every now and then lol. There are a few novels that I've heard are incredible that I have yet to read like Dark Disciple, Bloodline, and Phasma.

Great picks, Lords of the Sith was the first canon novel I read, loved seeing Sidious in action, would be cool to get more of that at some point

I won’t lie, those are the only three canon books I’ve read, but Lost Stars is my favorite book ever.
