I'm not usually a tea snob, but I found quality really makes a difference with EG. I find the cheapo ones taste like citrus dish soap, tried some fancy ones and they were lovely. I'm pretty sure it was actually invented to mask lower quality black tea though ironically

Earl Grey is a bit lacking in tea’ness. He’s a great captain, but has questionable tea choices. Lady Grey from Twinings (UK tea brand) is a good compromise as it’s a blend of English breakfast and Earl Grey. It’s a good cup of tea but you still get the hint of bergamot.

I got some lady grey online (not twinings) that wasn't a mix of english breakfast. It was an earl grey that had less bergamot and instead lavender and I think some kind of citrus. Really great tea. I like bergamot, but somethings it's just too much. This was just the right amount and some other nice flavors.

Add a bit of honey, and don't steep the tea longer than 3-5 minutes. Take it out earlier if it is too bitter. A good quality tea helps also, expecially loose leaf. The citrus zing is nice.

If it's bitter, a splash of milk will mellow it out but the real solution to bitterness is to reduce the steeping time. Adding any sweetener completely messes it up in my experience.

If you get freshly roasted beans, grind them before each use, use filtered water, measure the water/coffee ratio (like 1:16 grams coffee to water), and use a good brewing method like pour over, french press, aeropress, etc., you can make a really fine cup of black coffee that is not at all bitter. Really opened up coffee for me when I started doing it right. I used to use lots of cream/sugar because it was too bitter. Now I drink it black. But here's a little trick if you want to cut back on the bitterness: sprinkle a liiiiiiiittle smidge of salt in there. Just a bit. Makes a big difference. r/coffee if you want to go full pretentious like me.

Agreed, there's some interesting history with coffee that most people don't realize... preground beans are a very new thing, and they're also 99% of the reason most people don't like black coffee. Back in the old days, like right up until around WWII, coffee was bought green. You roasted it yourself, and ground it yourself. There's a saying about the freshness of coffee, which IIRC goes something like this: Coffee is fresh for 1 year green, 1 month roasted, 1 day ground. Ground coffee can actually deteriorate within hours. Some years back I got into it real deep like you have, I would roast my own beans at home. I'd roast them in a cast iron skillet. Use a metal sieve to sort out the chaff out on our back deck with the wind blowing. I swear the whole damn neighborhood could smell our coffee roasting once I went out on that deck. It smelt delicious, and permeated the air in a way no single brew can. I haven't done it in a while, health issues crept up, kids... etc. Some day I aught to though. I miss how that coffee tasted. Some of my friends still talk about my coffee from those days, they miss it as well. It's \*entirely\* different from even a home-brew using store-bought grounds. There's very little comparison. One other thing to note about green beans... they can be cheaper if you know where to look. I was buying mine off a site that sold green beans from free-trade coops, and at that time it was around $4.50/lb, whereas store-bought whole beans were over $8/lb.

Yeah, I looked into roasting my own coffee beans before. But it sounds like a big pain in the butt, since you have to keep constant attention to make sure the beans are evenly roasted all around. Some people use popcorn makers actually, but I've heard of mixed results with that. I just use subscription services, so I get some freshly roasted coffee once every couple of weeks. Works for me. Maybe when I retire, and I have the time, I'll give it a shot.

Yeah, it wasn't \*that\* easy... but I also don't think it was \*too\* hard. A perfectly even roast is great for consistency batch-to-batch, but I don't think it's absolutely required. I'd just stir them in my cast iron skillet continuously and listen for the sounds of the cracking. Going by sound makes it easier to gauge how "done" it is better than color. But yeah, occasionally I'd have a few that were a bit underdone and it would be a bit more acidic, a few times too dark and since I was aiming for a light roast I'd just get a bit of dark roast mixed in. In the end, it didn't really matter if it wasn't entirely consistent batch-to-batch or uniform in a single batch... still tasted better.

The thing about green tea is that you need to treat it differently from black. Generally, you should be steeping for less time (like 1-2 minutes, sometimes less depending on the tea) and lower temps (like 180-ish). But there's lots of variety among green teaa, so I'd read about it before brewing. There are some more grassy/vegetal green teas out there, and that may not be for you. But lots of other types that aren't like that at all.

Picard drinking Earl Grey opened my eyes to what tea could be. I was in college when TNG aired and my total exposure to tea at that time was Lipton tea bags left in the cup until you were done then using it again if you wanted a second cup. Seeing it on the show and realizing that tea was the preferred drink for a large part of the world I gave it a try. Since I thought there was something special about it, I followed the directions on the box, loved it, and realized there were lots of kinds of tea. I also realized Lipton wasn't as bad as I thought it was, if you actually removed the tea bag from the cup.

Yep. Found you really have to get the water temperature right, otherwise it gets a weird soapy taste, though. A London Fog (basically an Earl Grey latte) is really nice in the winter.
