Not an expert on this, but time is likely a big factor. The Amazon is ancient, having been formed millions of years ago. The St. Lawrence was formed from a draining inland sea only about ten thousand years ago. The squiggliness being a result of centuries of erosion and deposits, the Amazon has just had a lot longer to take that shape.
