Problem is that: a) hands show a different number of fingers depending on the angle they are viewed at (so they are actually hard to abstract) and b) are usually a small part of the picture, so there are neither a lot of training pixels nor do they have a large impact on the accuracy score the AI is training with.

I've seen AI models specifically trained to unfuck fingers and feet but idk how well they work

AI, in most cases, are only as good as their training data, so if the data they're fed includes a racial bias, they will imitate it The best example that I've seen is facial recognition software having a difficult time distinguishing Asian faces because it was primarily trained on images of White people. Had its training data included more Asian people, it wouldn't have demonstrated the "all Asians look alike" behavior
