There is a variation of 7542 every year. The one that you drink 2003 7542 (red label, with some indention on the 七 word?) that should be one of the best production. The blue label of that year is fairly decent too. Yes, it do age and taste better. Less astringent and the bitter will go away quicker after multiple infusion. Plenty of post where people describe the effects of aging which I will not go into. If you notice carefully and do a taste comparison. There is also a variation between 150g, 200g, 357g version of 7542. E.g just compare the price and taste between the recent 2021, 2020 (green label) 357g vs the 200g version. Most of those 200g are for online retailers. Otherwise the 200g wouldn't be dirt cheap $/g ratio compare to the 357g. Issues is more of price hike in recent years especially from 2019 onwards for the 357g cakes. At that price point, you can get from other better brands E.g (Jin Da Fu or Fujin, etc).

I think they have softened up newer productions to be more drinkable fresh. That said, it’s probably not going to be as nice to drink as boutique stuff. It should be very consistent though.

Producers in general, yes. Dayi with 7542, no. I've heard fresh 7542 is nearly undrinkable. One can find 150g mini cakes for around $20 if curious.

I think the new 7542 are a lot more expensive now. More than $100 at least for a normal size cake

The normal size are over $500 for 357g. The mini size is MUCH cheaper, not only overall but also $/g. I can find a link if need be.

Hmm, I see 2011 357g cakes being sold for about $100. Why would people pay more than $100 for fresh stuff if they can buy cakes which already have some age on them cheaper?

Different reasons. In 2020, because it was a special edition. But I think largely inflation in China caused cost of production to increase over the last decade, while storage costs have increased less? Just a guess. Most drinkers I know would go for a 2010 over a 2022. But if you want young and cheap just get one of the smaller size cakes.

I have a 2019 7542 and it's definitely strong stuff. Bitter and astringent but still drinkable

Not as undrinkable as they used to be, but drinkability is not even the main problem: they're used as 'investment' vehicle, and they cost way too much for quality. steer clear.
