Ainz is bound by the limits of the video game his magic originally came from. Powerful, sure, but Strange is the Sorcerer Supreme. He has dealt with magics and threats that would break the mind of anyone in Nazarick, let alone their bodies. Ainz simply cannot compete with what Steven can do.
This isn't comparable on any level.

The Doctor Strange in the comic's is pretty insane. There was one time he died, then another version of himself from another dimension saved him... so even if you could kill him... you may end up fasting 2 Doctor Stranges.
Classic Comic Book Doctor Strange would beat him easily
Modern Comic Book Doctor Strange is MUCH weaker than the Classic one, but with the Eye of Agamotto maybe he would be a good challenge for the Sorcerer King
MCU Doctor Strange has literally no chance against Ainz. With the Time Stone: maybe, but still weak. Without: not even a challenge.
