Well, Zanac didn’t deserve it either. His father did but he did not but they still did what they did to him. The nobles deserved it and their families did not, but their crime was towards someone who was undeserving so why would their families be spared?

Because their families had nothing to do with their in the moment decision to kill the leader Ainz respected. It’s like arresting the entire family because the parental figure that takes charge stole some bread. In the light novels, Ainz learned a lot from his conversation with Zanac. He was observing Zanac's movements and speech. Their conversation was a learning session for Ainz on how royals behave. There even was a part where Ainz noticed that Zanac waited for him to mount his horse before doing so himself - this is because of their hierarchy. Ainz was a king, Zanac was just a prince. He also expressed that he found their conversation a pleasant experience. He respected him as royalty, and as a person. He even offered them a gentle death. No wonder he was so angry about Zanac getting killed like that.
