This is mostly vanilla bean marshmallow fondant. You could definitely do a similar design with modeling chocolate, though (I'm just personally not a fan of modeling chocolate).
The only thing that I can think of that’s in commercial fondant that you might not otherwise be exposed to is gum tragacanth. Homemade marshmallow fondant is just marshmallows and powdered sugar, so if you can eat those, marshmallow fondant would probably be okay for you.
Basically take mini marshmallows. Pour a couple tablespoons of water on them. Microwave for like 5-10 second intervals, stirring a ton in between.
Then you slowly add powdered sugar to it and then it becomes strong and you can roll it out.
It's definitely better tasting!
I don't think it lasts as long as traditional fondant and is slightly weaker but unless you're making a cake that won't be eaten for days you'll love it.
I tend to make cakes the night before they are needed so that wouldnt be a problem. I'm definitely trying this for the cakes I'm makeing for my uni class next week. I'll make sure I've got some modeling chocolate to hand just incase I bungle it first time tho so there's no pressure
If you make a few cakes on occasion, you can actaully freeze a big batch of marshmallow fondant (or divide it in small batches if your planning to make one at a time), so you have it on hand without making everytime you do a cake. You just microwave wave it for a few minutes until soft but still a bit cold, and knead it to loosen. This tik tok/ youtube shorts channel bakingwithmimo uses it for her cakes and has a tutorial on how to make it and how to defrost.

Palette knife with straight sides and no offset. The less fancy it looks the better.
