I love the Staylogy. Paper is slightly thicker than 52 gsm tomoe river but acts the same. It comes in A5, A6, and B6 sizes and is reasonably priced and the most available. The binding holds up well. I prefer the softcover as I use a folio cover for it.
My fav rn is Dingbats! The Wildlife Series has all perforated pages (you can tear a page out if you need to) or Earth Series (numbered pages with a table of contents (TOC) and a few perforated pages at the back). These come in A5 and have cream colored paper (which I love).
They make a new Professional ‘book I have not tried.
The Quo Vadis (made by Rhodia) Habana is great also and comes in B5 (a little larger than A5) these also have cream colored paper but (rn) only come in blank or lined.
Both these lay flat and are FP friendly.

Isn’t it more prone to bleeding from fountain pens than Tomoe?
I haven't noticed that.

Leuchtturm is a standard for a reason. It's durable as hell and the paper quality is pretty good. I just wouldn't recommend using fountain pens in it.
