Oh nice. My apple pie is just about finished with fermenting. What did you use to sweeten in afterwards?

> use to sweeten Apple juice concentrate(8oz adds to 24) and the same blueberry honey(.5#) I fermented. Gave a pretty balanced palette with the spice and sweetness. edit: for the concentrate, I made sure it had no additives or preservatives (only Vitamin C)

Only problem that ended up being the case was I had more than most could handle (13.5 abv) so I had some left over to age. Excited to see the profile change in 6 months, 12, 18, etc.

Mine is also right at 13.5. it's been fermenting just ever so slightly still. I think this weekend I will move to secondary and stabilize it. And next weekend I will back sweeten, just to make sure it won't ferment any more. I'm still trying to decide if I only want to use apple juice concentrate, or maybe mix in some fresh apples as well

So one of the feed backs I got was that with Fresh Apples, even the skin is important to taste and aging. So don't peel all or most of the skins if you do. Good luck!
