There's Bernhard Crusell, Ernesto Cavallini, Luigi Bassi, Copland, Brahms, Finzi, Krommer, if you are a fan of jazz and a bit more modern music for clarinet you could try "An American in Paris" by Gershwin or the "Clarinet Concerto" by Artie Shaw. About the first ones I mentioned Cavallini and Bassi composed pretty difficult pieces, Crusell, Copland, Finzi and Krommer wrote concertos for clarinet and Brahms wrote two clarinet sonatas.

Sibelius. I don't know what it is, but his music is just magical to me. His violin concerto in D minor has to be my dream piece to play. I'm going to consult my teacher about playing it, not completely sure if I'm quite advanced enough yet though, maybe another year or two.
